So to be 100 % correct.  Should all assembly line button style fuel pump  read  CARburaTER ?

65-67 yes CAR bure TER . 68,69/70 typically CARTER SB+BB.

+1 Earliest CARTER small block I've got records of was dated in fall of 67 and boxed 12/13/67

Ummmm, no 67 GT-350 convertibles were SA built.

I thought there was one built.  Just wondering if it had a 67 or 68 fuel pump....

There were no '67 GT350 convertibles made by Shelby.

Shelby did place a DSO for one '67 big block convertible and the car build by Ford to that DSO was in late '66 and I would guess had a '67 fuel pump, or maybe a '66 big block fuel pump others will know better. 

The landmine on this forum (or the hand grenade you are perhaps lobbing) is was the car ever finished as a '67 Shelby GT500 convertible or did it skip the '67 model make-up and go straight to getting made as a '68 GT500 Convertible prototype.

So the question I think to ask is - did the '67 Big Block convertible Ford made for Shelby have a '66 or '67 fuel pump?

Notice in the picture of reply #3 that the CAR bur TER  pump has the 65,66,67 smaller 5 /16 fuel inlet and the  CARTER pump has the 68 69/70 3/8 inlet. The fuel inlet size is another tell tale sign of Mustang year application.
