Have you ever use one of those stripe remover tools(rotary)? I never had but under warranty back around 2000 the dealer had to "buzz" my high top stripes off and put new ones one. I was told there was a tool that buzzes them off and doesn't hurt the paint but makes a mess. I remember an episode of Bitchin Rides where they went to pull the film off of the front of a classic Corvette and it peeled the paint off with it. And that was film.

Did it become an Option in 68 because my very first Mustang was a 68 and it had the Dash Knee Pad.  I had several 68's that had the Dash Knee Pad.

over the decades rebodies became apparent on some cars as the donor cars had or didn't have the running changes. I think a Yellow KR vert had been cited before IIRC?

It was not an option. Once the dashboards were depleted at the end of 1967 Calendar Year, the knee pads disappeared.

If you had 1968s with the knee pad they would have been built at the beginning of the 1968 model year.

This feature is a big deal because the steel dash, an integral part of the car, is actually different. So, yes it can be an indication of a rebody. Obviously, it should not be the only feature looked at.

I have known owners and restorers to have added the knee pads thinking they were all supposed to have them so not necessarily a indication of a rebody but definitely a red flag to investigate further.

When checking the knee pad, original Ford holes in the metal part were usually oval shape.  If they're round, a previous owner likely drilled them.

My first 2 68's were 6 Cyl. Coupes so, I don't think they were Rebodies.
