Any idea what new valve covers go for a 66 Gt 350 , these are Ford valve covers in original boxes I guess over the counter Ford product .

Depends on which "version". Can you post a few photos, particularly the areas around the PCV hole and/or breather tube base?

Can we assume you are referring to the solid letter versions?  You did not say, but might be implied.  The open letter covers are not typically seen as over the counter.

I believe a forum member sold a used set recently for around $250, non fanged.  There is a NOS set on auction, PCV hole is post fang, pre-keyhole for $600.

There is a used set, PCV key hole for $349 and the same sytle NOS for $325, both did not sell.

A matching PCV hole fanged set sold for $295.  Missing oil fill side.

As S2MS says, which version can make a difference, but patients can get you an assembly line version for less money than a later style NOS set.  The open COBRA lettered covers are a different story.  NOS sets are rarely seen.  Which style are you asking about?

Thanks for the detail regarding the variations you posted!

I was under the impression that the "square" relief for the valve cover bolt access was a key factor to the originals and the rounded was indicator of the reproductions, see attached (sorry needed to use one of your images to show this variation more clearly), is this the case ?

+1, Cory's photos show a nice comparison between OE fanged and post-fang versions.

Original closed letter covers used 66-70, and available as service replacements up until ~1975 in my observations, had a subtle machining difference around the PCV and filler tube holes when compared to later service replacements that has become known as "fangs". The later service replacements appear to have had slightly more material removed (larger diameter) from that area so the fangs are gone. There is also a little more material remaining on the lower rib in the OE version. There is a nice Scott Drake repro with fangs.

I believe the author of "Fanged" might be S2MS.  At least he is the one I learn the term from.

I think there are four versions of the Ford made solid letter valve covers,  assuming the covers we are seeing with Ford boxes are indeed Ford pieces.  I have summarized in the image below.

Tell me if I got it right or tell me where to make changes.

Would be fine a descriptor for some purposes  though not sure that it would work in a graphic as you displayed and how it is laid outlaid out. IMHO it all depends on how one chooses to communicate the information and features.  So many different ways one could organize things
