would a set of 245/60 15's fit on my 69 GT500 without having clearance issues?

Definitely no issue on the back . I have been running  THAT SIZE FO OVER 20 YEARS

I didn't think that there would be on the backs. I am more concerned with the fronts during hard turns.  I don't want to contact the fiberglass front fenders.

I ran 245/60/15's on a 69 with lowered arms and never had an issue.

Depends on the tire company(not all 245s wade the same from manufacturer to manufacturer) and the height of your car. My Gt350 old Goodyear STs 245-60s would catch the wheel lip on "fabulous" Mi potholes. I had my rear eaton springs re-arced and then not a problem. 235-60-15s these days are the closest to a F-60-15 put on back in 1969 if that is what your car came with. I run 255-60-15s on my Mach1 and had them on my old 68 Shelby with no tire rub issues but my springs helped in those regards. If you have the ride height you may want to go with 255-60s in the rear(check side wall clearance) and 215-65-15s (E-70-15 replacement) or 235-60-15s(F-60-15 replacement) up front. Gary
Here is my old 68 running the 255/215s and my Mach1 running 255-60s with 235-60s and my vert running 235-60s. Last pic running 245-60s.
Oh, yeah, I still haven't found the time to see where my tire is rubbing  on my 69 Mach1 or why when I pull out of my drive way turning the wheel all the way to the left. With manual steering I cut it real fast and I get a rubbing sound as I go over the lower driveway curb and it isn't the body sheet metal it is rubbing on. That is with 235-60-15s on the front.

With no clearance issues in mind, I went with a 235/60/15  Cooper Cobra as they are within a fraction of an inch of the original, stock Polyglas 60 series tires

that is why I went with 235s. When shopping for my 68 Shelby back around 2008 and looking at the "generic" conversion size charts I found out that not all tires with the same size are the same size. Back in 1986 when I bought Goodyear STs for my Shelby the Goodyear store said the direct replacement for F-60s were 235-60s. Fast forward to a few years ago and the 235-60 Coopers are the direct replacement. My preference is a vert run the same size on all 4s. On a fastback larger tires in the rear for that muscle car look.

yep and to impress myself I like larger tires on the rear of muscle cars for the most part being 67-70 fastbacks. I've never been one to impress others. My cars, my way and why I did things like color changed cars and added Magnums, louvers and spoilers to 69-70 Mustangs since 1979.  8)

Let me take my question one step further.  I DO have a set of new (never been on a car) 245 tires.  The problem/question is that they are date coded 2017, as manufacture year.  Again, they have not been on the car, so would you use them since they are 6 years old?????

The question is can you find a tire store that will mount them and balance them? I'd use them. My wife's 2014 Cruze still has the original tires on it. My Shelby had Goodyear STs put on in 1986 and replaced in 2019.
