I don't know the restorer, but give him credit for allowing video of work being done.  I'm guessing Shelby's are not his forte, but the one positive thing is I'm sure this has been a learning experience.  Each of us that have done restorations have gotten better with each car done.  I would have liked to have seen less power tools being used and more following the Ford shop manual for torque specs.

I understand from those that have talked to him in the context of this restoration prior to the beginning of it that he considers himself a competent Mustang restorer that doesn't need any help. He lives relatively close to Jerry which was the main reason for him getting the job so Jerry could more easily video document.
