Are body panel date stamping codes like parts?

For example, would they be stamped 6 M 20 for a panel stamped on December 20, 1966?

No. Pattern depends on when the part was stamped, the stamping plant that did it and some other factors.

Basically then generally (does not apply to all parts) follow a pattern like

6 7 2 Month- Day of month- Shift

6 7 2D Month- Day of month- Shift- Stamping plant

6 7 C2 Month- Day of month- Stamping plant - Shift

In some cases on specific parts used to construct a 67 Shelby the pattern is not followed. but those above will address a majority of the body panels

So 6 7 2 would mean June 7th, 2nd shift?

Is the year not part of the stamp?

Yes some service replacements did - depending on the panel we're discussing. Aftermarket is a different discussion and I've not seen every style used on those over all these years.
